Golibajje or Mangalore Bonda is a famous and tasty evening snack throughout South India. Having tea or chutney with golibajje during monsoons is a different kind of fun. Main ingredients for making Mangalore Bonda are maida flour, curd, cumin seeds, sugar, ground uddi flour and salt to taste.
First add green chillies and mix neem, ground ginger and kaythuri in equal quantity. Then add the uddi flour and add salt, sugar and cumin to taste and mix well. Chickpea flour and Maida flour should be added to it and kneaded, then the flour mixed with hot oil should be left in the shape of balls.
